How to make Sponge cake without eggs

Holidays means eating, partying and having fun. For Christmas, my daughter is fond of Christmas Cookies and sponge cake. So i always prepare both for her with some nice dinner. I have made this cake without using all purpose flour. This sponge cake is made using Semolina. Semolina is a healthy substitute and has good nutritional value too.

Preparation Time : 5 minutes

Cooking Time : 45 minutes

Total Time- 50 minutes

Ingredients to make Sponge Cake

  • Semolina – 250 gms
  • Milk – 150 ml
  • Plain Yogurt – 150 ml
  • Vegetable Oil – 8 tbsp
  • Sugar – 12 tbsp
  • Vanilla Custard – 3 tbsp
  • Baking Powder – 1/2 tbsp
  • Vanilla Essence – 1 tbsp
  • Baking Soda – 1/2 tbsp
  • Tutti Frutti – 2 tbsp each color

To decorate

  • Tutti frutti
  • Chocolate Syrup

Process to make Sponge Cake

  • In ¬†bowl add semolina.

  • Add milk to it and mix well. It should be mixed nicely

  • Add plain yogurt (curd) to it and mix it well again

  • Add vegetable oil and sugar. Mix it again. I have used the normal sugar. You can use powdered sugar as well.

  • Add 3 tbsp of vanilla custard and mix. Make sure no lumps in batter

    Please tell me what is the role of Yogurt in the Suji Cake? Can I just make it with Evaporated milk and no yogurt ?

      Hi Charu,
      Thank you for writing. As its an eggless cake so yogurt gives it a nice spongy and soft touch. Same way you can use evaporated milk (condensed) too. If using a sweetened one kindly adjust sugar accordingly.
