Lemon Rice Recipe

I just tried to cope up with my Monday blues by pampering myself with Rice delight. Made lemon rice today. Socha kyu na kare week ki shuruaat kuch chatpate ke sath (thought of starting my week with something tangy). Not much of efforts are required to make this dish. All you need are leftover rice. Its like makeup of already cooked food.

It is also called as Pulihora. But in pulihora we add tamarind paste too. So this one are part of south Indian cuisine. It goes really well with roasted potatoes and coconut chutney. But I am a big fan of yogurt (curd) so i will be having it with curd only.

Mentioned quantity will serve One person only. Increase it as per the requirement

Ingredients to make lemon rice

  • Oil – 1 tbsp
  • Mustard Seeds – 1/2 tbsp
  • Fenugreek seeds – 1/4 tbsp (methi)
  • Curry Leaves – 6-7
  • Split black gram lentils (Urad Dal) – 2 tbsp
  • Dry Red Chilli – 1
  • Turmeric Powder – 1/2 tbsp
  • Red Chilli powder – 1/4 tbsp
  • Boiled / cooked Rice – 1 bowl
  • Lemon juice – 2 tbsp
  • Salt to taste
  • Roasted Peanuts – 8 – 10

Serve with

  • Roasted potatoes
  • Curd
  • Coconut Chutney
