Carrot Pickle

My favorite pickle since childhood. Every winters my mother used to make a big jar of this pickle. No one can ever replicate the flavors of a mom’s magic but yes in this recipe I have tried to be close to her version. Hope you all will like it too.

My daughter hate carrots but she loves it in pickle form. So it gives me an another reason to re live my childhood.

Its an easy recipe and an Instant one so give it a try 🙂

Ingredients required to make Carrot pickle

  • Mustard Oil – 4 tbsp
  • Carrots – 7-8
  • Bay leaf – 1
  • Mustard seeds – 2 tbsp
  • Asafoetida – 1/4 tbsp
  • Cumin seeds – 1 tbsp
  • Turmeric powder – 1/4 tbsp
  • Sugar – 1 tbsp
  • Ginger Julienne – 18-20 strings
  • Salt to taste
  • Vinegar – 2 tbsp
