Amritsari Aloo Kulcha at home

Every place has its own delicacies. Most part of my life till now, I have spent in Punjab. Punjab is a northern state of India. Being a foodie punjabi my first priority while travelling is to taste a local dish. Whenever I visit Amritsar, a northwestern city in Punjab I always eat their famous Aloo Kulchas. Kulcha is a Indian flat bread which is stuffed with a mixture of potatoes and onion and then cooked using an earthen oven/ tandoor.

In this recipe I have made exact replica of Amritsari kulcha but without tandoor. Not everyone has access to a tandoor in there home so this recipe will allow even them to enjoy this scrumptious recipe at home. Also I have shared the way with which your Kulcha will become exactly as crisp as the one made in tandoor.

Ingredients required to make Aloo Kulcha are

For Dough

  • All purpose flour – 250 grams
  • Salt to taste
  • Carom Seeds – 1/4 tbsp
  • Plain Curd – 6-8 tbsp
  • Water to knead dough

For Filling

  • Potatoes – 2
  • Onion – 1
  • Ginger – 1 tbsp
  • Coriander Seeds – 1/2 tbsp
  • Dried fenugreek leaves (Kasuri Methi)
  • Salt to taste
  • Dry Mango powder – 1 tsp (Amchur)
  • Red chilli powder – 1/4 tbsp

While preparing

  • Butter
  • Dry Flour for dusting
  • Black Cumin (kalonji)
  • Sesame Seeds (Til)
  • Dried fenugreek leaves
